As it turns out, I have found a solution! Surprisingly, I was already somewhat aware of it, but didn't realize it until just awhile ago.
I remembered when streaming available channels from Plex Media Server to my PS3, I was able to actually download the shows and save them on my PS3 hard drive, which could then be copied to a flash drive. I no longer have a PS3, but I thought if I could do it with that then surely it would work from a PC. And it does! Best of all, it's VERY simple.
Once Plex Media Server is installed on your computer you can select "Channels" and select the ones you would like to be able to stream from via the media server. Granted, only some are available, e.g. History, CBS, CW, A&E. Once those channels are loaded you can open Windows Explorer, and under Network Locations (see snapshot) you should see Plex Media Server (or whatever you may have renamed it). From there, just navigate to the channel and available episode you want. Then point, click, and drag it to another folder.
Note: The first 99% may go by very quickly and then stop so it looks like nothing is happening. Just be patient and wait until it completes.
