Has anyone ever re-streamed a stream?

I will have 5 streams coming in from 5 Panasonic IPPro cameras and want to mix the streams i.e. select this one or that one ( kinna like a traditional mixing desk ) and then have that stream (or the re-stream) sent up to a streaming service.

HELP!!!!
