If your HDTV supports 1080p, it will show 720p without any problem. Many people don't notice much difference between 1080p and 720p. At least the difference between 480p and 720p is much bigger than between 720p and 1080p.

If you want to watch 1080p movies from xbox360 while connecting it using component video passthrough of
HD PVR, you won't be able to do that.
If you want to watch 1080p videos from your blu-ray player,
network media player,... connected over HDMI (or even component video), I don't see any problems.

720p and 1080i give comparable quality. I prefer to use 720p, because I don't like interlaced videos with fast actions.
