Chat Roulette uses RTMP streams broadcasted by FMS. 2 or more persons can't connect to the same stream, so you can't watch the stream and download it at the same time. And you won't be able to record when someone disconnects.
However, as already mentioned above, you can capture RTMP packets from chatroulette.com.
Jaksta in the RTMP recording mode works just fine for me when recording from chatroulette.com.
