New streaming audio station: Encoding for WMP and QuickTime. Need help.


I am starting a new streaming station and am a little unsure of how to proceed. I have the inputs down ok, I'm just unsure on the signal flow out to the users. I will have the following gear:
Macpro
D-75 broadcast console
LA-3A Dual Compressor
AD-16x converter
Rosetta 200A/D/A converter
Omnia1Multicast
XServe Raid
Other misc. gear like mics preamps etc.

I plan on playing the audio in I tunes out to the console, do I then send signal back into the computer to encode it? And what can I use to encode audio for quicktime and wmp? Can I encode both on a mac, and at the same time?
