Captions are tough as they're usually inserted OVER the video itself via a seperate file. (Thats why you can often turn them on or off, or change the language)

To record videos WITH captions - you'll NEED to use a Screen Capture (http://all-streaming-media.com/record-video-from-screen/) tool such as Replay Video Capture (http://applian.com/replay-video-capture/) for this type of file. :)
